- 500g- brown stock
- 100g- onion
- 2tbsp- sunflower oil
- 500g- Stewing mutton
- 25g- flour
- 100g- carrot
- 1 level tbsp- tomato puree
- 1- garlic
- bouquet garni
- salt, pepper
- parsley

Directions
1. Cut the meat.
Trim the meat and cut into even pieces and season.
2. Mix the ingredients.
Partly fry off the seasoned meat in the oil, then add the carrots, garlic, onion, and continue frying.
3. Add flour.
Drain off the surplus fat, add the flour, and mix.
4. Brown.
Brown on top of the stove for a few minutes.
5. Add the tomato puree.
Add the tomato puree and stir with a wooden spoon.
6. Add the stock.
Add the stock, bouquet garni, and season. Bring to the boil and skim.
7. Simmer.
Simmer gently for 1 hour, until the lamb is tender.
8. Serve.
Serve sprinkled with chopped parsley.
