Fish stock is made from fish bones, carcasses, olive oil, leeks, onions, celery sticks, fennel bulb, dry white wine, parsley stalks, white peppercorns and lemons. Follow the step-by-step procedure below on how to prepare fish stock and enjoy your cooking.
2. Heat the olive oil in a deep stock pot large enough to hold all the ingredients.
3. Add all the vegetables and sweat without colour for 3 minutes.
4. Add the fish bones and sweat for a additional 3 minutes.
5. Add the white wine and enough water to cover. Bring to a boil and simmer immediately, skim off the impurities and add the herbs, peppercorns and lemon and turn off the heat.
6. Leave to infuse in the refrigerator for 25 minutes, then pass into another pan and reduce by half. Now strain stock ready for use.
