  • 5kg- Fish bones
  • 100ml- olive oil
  • 3- onions (diced)
  • 3- leeks(diced)
  • 3- Celery (diced)
  • 1- Fennel bulb (diced)
  • 350ml- Dry white wine
  • 10- persely stalks
  • 3-springs- Thyme
  • 15- White peppercorns
  • 2- Lemons (finely sliced)

Directions

1. Wash the bones.
