Ingredients
- 5kg- Fish bones
- 100ml- olive oil
- 3- onions (diced)
- 3- leeks(diced)
- 3- Celery (diced)
- 1- Fennel bulb (diced)
- 350ml- Dry white wine
- 10- persely stalks
- 3-springs- Thyme
- 15- White peppercorns
- 2- Lemons (finely sliced)
Directions
1. Wash the bones.
Wash off the bones in cold water.

2. Heat the olive oil.
Heat the olive oil in a deep stock pot large enough to hold all the ingredients.

3. Sweat the vegetables..
Add all the vegetables and sweat without colour for 3 minutes.

4. Add the fish bones.
Add the fish bones and sweat for a additional 3 minutes.

5. Boil.
Add the white wine and enough water to cover. Bring to a boil and simmer immediately, skim off the impurities and add the herbs, peppercorns and lemon and turn off the heat.

6. Sieve.
Leave to infuse in the refrigerator for 25 minutes, then pass into another pan and reduce by half. Now strain stock ready for use.
