Ingredients
- 300g- Onions
- 300g- Carrots
- 300g- Celery
- 300g- Leeks
- 180ml- Sunflower oil
- 150g- tomatoes
- 150g- Mushroom trimming
- 18pcs - Peppercorns
- 15g- Yeast extract
- 4 ltrs- water
Directions
1. Fry the vegetables.
Cut the vegetables into mirepoix and fry them in oil until golden brown.

2. Place the fried vegetables in a stock pot.
Drain and place the fried vegetables in a stock pot. Add all the other ingredients except the yeast extract and water.

3. Boil.
Cover with the water and bring to boil. Add the yeast extract and simmer gently for approximately 1 hour.

4. Skim and strain.
Then skim if necessary, and strain ready for use.
