How to make chilled leek and potato soup

Ingredients

  • 2ltrs- vegetable stock
  • 320g- Onions
  • 250g- butter
  • 1.5kg- Potatoes
  • 30g- Salt
  • 350g- Leeks (diced)
  • 15g- chives (chopped)
  • 150g- whipped cream
  • Pepper to taste

Directions

1. Sauté the sliced onion and leek without color in the butter. Cook until very tender.
2. Add the potatoes and boil in vegetable stock.
3. Liquidize in a food processor and allow to cool.
4. Check the seasoning.
5. Serve cold with whipped cream and chopped chives.
