- 40ml- White wine
- 1000g- clams
- 4- shallots
- 100g- salted butter
- 2litres- chicken stock
- 100ml- vegetable oil
- 200ml- whipping cream
- 2- celery sticks
- 2- onions
- 4- cloves of garlic
- 2- potatoes
- 2- carrots
- 100g- smoked bacon

Directions
1. Cook the bacon.
Heat the vegetable oil in a pot. Add the chopped bacon and cook until lightly crisp. Set aside.
2. Prepare the base.
In the same pot, add butter. Sauté the onions, carrots, shallots, celery, and yellow pepper until soft.
3. Add the garlic and potatoes.
Stir in the garlic and cook briefly. Add the diced potatoes and mix well.
4. Deglaze.
Pour in the white wine and allow it to reduce slightly.
5. Add stock and simmer.
Add the chicken stock and bring to a simmer. Cook for 10 minutes until the potatoes are tender.
6. Add clams.
Stir in the clams and cook for 5 minutes.
7. Finish with cream.
Pour in the whipping cream and return the cooked bacon into the pot. Simmer gently for 3 minutes.
8. Season and serve.
Season with salt and pepper. Serve hot
