  • 500g- red kidney beans
  • 20- small turned potatoes
  • 125g- tomato puree
  • 1.5ltrs- vegetable stock
  • 60g- paprika
  • 2- garlic cloves
  • 150ml- sunflower oil
  • 125g- onion
  • 2- bouquet garni
  • 2- green pepper
  • 2- yellow pepper
  • 4- red pepper
  • parsley
  • salt to taste

Directions

1. Boil.

Boil the soaked beans (drained), then bring to a simmer till tender.

Heat the oil in a saucepan and sweat the onions without colouring and add paprika.

Add in the peppers and the button mushrooms and sweat for two minutes.

4. Add the vegetable stock.

Add the tomato puree, vegetable stock, and bouquet garni, then boil and simmer until the mushrooms are cooked.

Remove the bouquet garni and the drained cooked beans, and correct the seasoning.
