- 500g- button mushroom
- 500g- red kidney beans
- 20- small turned potatoes
- 125g- tomato puree
- 1.5ltrs- vegetable stock
- 60g- paprika
- 2- garlic cloves
- 150ml- sunflower oil
- 125g- onion
- 2- bouquet garni
- 2- green pepper
- 2- yellow pepper
- 4- red pepper
- parsley
- salt to taste

Directions
1. Boil.
Boil the soaked beans (drained), then bring to a simmer till tender.
2. Sweat the onions.
Heat the oil in a saucepan and sweat the onions without colouring and add paprika.
3. Add the mushrooms.
Add in the peppers and the button mushrooms and sweat for two minutes.
4. Add the vegetable stock.
Add the tomato puree, vegetable stock, and bouquet garni, then boil and simmer until the mushrooms are cooked.
5. Add the beans.
Remove the bouquet garni and the drained cooked beans, and correct the seasoning.
6. Garnish.
Garnish with the already cooked potatoes and chopped parsley.
7. Serve.
Serve with whole grain pillaff.
