White Stock Recipe

White stock is made from a combination of several ingredients, including raw meaty bones, water, onions, carrots, celery, leek, peppercorns and bouquet garni. This stock then forms the base for most soups and sauces. Here is the white stock recipe.

How to prepare white stock

Ingredients

  • 1kg- Raw, meaty bones
  • 100g- Onion
  • 100g- carrot
  • 100g- celery
  • 100g- leek
  • 1/2 Bouquet garni
  • 8- peppercorns

Directions

1. Chop the bones into small pieces, and remove any fat or marrow.
2. Place the bones in a large stock pot, cover with cold water and bring to boil.
3. Wash off the bones under cold water, then clean the pot.
4. Return the bones to the cleaned pot, add the water and re boil.
5. Skim as and when required, wipe round inside the pot and simmer gently.
6. After 2hours, add the washed, peeled whole vegetables, bouquet garni and peppercorns.
7. Simmer for 8 hours. Skim, strain and, if to be kept, cool quickly and refrigerate.
