- 4- barramundi fillets
- 2tbsp- butter
- 1tbsp- olive oil
- 2- cloves of garlic
- 1tbsp- fresh ginger
- 1tbsp- lemon juice
- 200g- pak choi
- salt and pepper, to taste
- 5- basil leaves

Directions
1. Prepare the fish.
Season the barramundi lightly with salt and pepper.
2. Cook the pak choi.
Heat a small amount of oil in a pan, saute the pak choi until tender. Remove and keep warm.
3. Pan fry the barramundi.
Heat the oil in a separate pan over medium heat. Cook the fillets skin- side down for 4 minutes, then flip for another 4 minutes until well-cooked.
4. Make the garlic ginger lemon butter.
In the same pan, melt butter. Add ginger and garlic, then stir in the lemon juice and torn basil leaves. Adjust seasoning.
5. Assemble the dish.
Place the cooked pak choi on a plate, top with the burramundi fillets, and drizzle the garlic, ginger, lemon butter, and basil over the fish.
