Ingredients
- 50g- Butter
- 20g- flour
- 120g- cheese(grated)
- 2- garlic
- 2ltrs- Brown stock
- 1.2 kg- onions
- 3/4- flute
- pinch of salt, pepper

Directions
1. Peel the onions.
Peel the onions, halve and slice finely.

2. Sauté the onions and garlic
Melt the butter in a pan, sauté the onions and garlic until cooked and well browned.

3. Add Flour
Mix the flour and cook over a gentle heat, browning slightly.

4. Add the stock.
Gradually mix in the stock, bring to the boil, skim and season.

5. Simmer.
Simmer for 10 minutes and adjust the seasoning as needed.

6. Pour into a soup tureen
Pour into the earthenware tureen or casserole, or individual dishes.

7. Sprinkle loaf slices on the soup.
Cut the French loaf into slices and toast on both sides, then sprinkle liberally on the soup.

8. Sprinkle with grated cheese.
Sprinkle with grated cheese and brown under the salamander.

9. Serve hot.
Place on a dish and serve hot.
