- 2ltrs- Beef stock
- 50g- barley
- 2- Bouquet garni
- 400g- Lean beef
- 400g- Vegetables (turnip, onions, celery, leeks, parsley)
- pinch of salt, pepper

Directions
1. Boil the beef
Place the beef in a saucepan, cover with cold water and bring to a boil.

2. Boil beef in stock
Clean the pan and replace the meat, cover with cold stock, bring to the boil and skim.

3. Add barley
Add the washed barley and simmer for 1 hour.

4. Add the vegetables and bouquet garni
Add the vegetables, bouquet garni, seasoning and simmer for approximately 30minutes.

5. Remove the meat and allow it to cool
Remove the meat, allow it to cool and cut it from the bone.

6. Remove all fat and cut the meat into neat dice

7. Correct the seasoning and serve hot.
Correct the seasoning, skim off all the fat, add the chopped parsley and serve hot.
