How to make a vegetable purée soup
Ingredients
100g- butter
2- Bouquet garni
100g- flour
2ltrs- white stock
200g- Onions, leeks and celery (sliced)
salt, pepper- to taste
Directions
1. Gently cook all the vegetables in the fat, without browning.
2. Mix in the flour and cook gently for a few minutes without browning. Let it cool slightly.
3. Gradually add the hot stock and bring to a boil.
4. Add the bouquet garni and season.
5. Simmer for about 45 minutes; skim as needed.
6. Remove the bouquet garni and sieve using a medium strainer.
7. Return to a clean pan, reheat to boil, and adjust the seasoning and consistency.
8. Serve hot.
