Ingredients
- 400g- scrag end of mutton
- 400g- vegetables (carrot, turnip, leek, celery, onion)
- 2- bouquet garni
- 2ltrs- mutton stock
- 50g- barley
- ½- parsley
- Salt, pepper to taste

Directions
1. Boil the mutton.
Boil the mutton in a saucepan.

2. Cover mutton with cold water and boil
Clean the pan, replace the meat and bring to a boil, then skim.

3. Add the barley.
Add the washed barley, and simmer for 1 hour.

4. Add the vegetables.
Add the vegetables, bouquet garni and seasoning.

5. Simmer.
Simmer until tender for approximately 30 minutes.

6. Cut the meat into neat pieces the same size as the vegetables.
Remove the meat, let it cool, then cut it away from the bone. Remove all fat and dice the meat into neat pieces the same size as the vegetables. Return the meat to the broth.

7. Add the chopped parsley
Adjust the seasoning, skim off all the fat, add the chopped parsley, and serve hot.
