- 1/2 tbsp- black pepper
- 2tbsp- flour
- 2- eggs
- 2 cups- breadcrumbs
- 1.5L- vegetable oil
- 2- lemons

Directions
1. Prepare the fish.
Rinse the fish fillets and pat them dry. Cut each fish fillet into thin strips (goujons). Season lightly with sea salt and black pepper, then dust lightly with flour.
2. Prepare the coating.
Beat the eggs in a bowl. Place the breadcrumbs in a separate shallow dish.
3. Coat the goujons.
Dip each fish strip into the beaten eggs, then press into the breadcrumbs until fully coated.
4. Heat the oil.
Heat the vegetable oil in a deep fryer.
5. Fry the goujons.
Carefully place the coated goujons into the hot oil. Fry for 5 minutes, turning occasionally, until golden and crispy.
6. Drain and finish.
Remove the goujons and place them on a paper towel to drain excess oil.
7. Serve.
Serve hot with lemon wedges and tartar sauce.
