Directions
1. Wrap the scallops.
Wrap the scallops in the pancetta, pin with a cocktail stick, and season.
2. Cook the scallops.
Heat the oil in a pan and place the scallops in and cook until golden brown. Squeeze the lemon over the scallops and allow the juice to evaporate slightly.
3. Remove from pan.
Remove the scallops from the pan, and retain with all the pan juices.
4. Cook the asparagus.
Return the pan to the heat and add the asparagus, cook for 2 minutes.
5. Serve.
Divide the asparagus on the plate. Top with the scallops and pour over the pan juices. Serve.
