- 4- onions
- olive oil
- 2- thyme spring
- 2- rosemary spring
- 8- lamb shanks
- 2- garlic heads
- 2- bay leaves
- 2- leeks
- 4- carrots

Directions
1. Prepare the lamb.
Season the lamb shanks with salt and pepper.
2. Brown the shanks.
Heat the olive oil in a large pot and brown the shanks on all sides. Remove and set aside.
3. Cook the vegetables.
In the same pot, cook the chopped carrots, onions, leeks, celery, and garlic until softened.
4. Add the liquids and herbs.
