How to make cream of spinach and celery soup
Ingredients
- 1kg- Fresh spinach
- 8- Celery sticks
- 1.2ltrs- Vegetable stock
- 30g- Flour
- 2- Leeks
- 4- Shallots (mirepoix)
- 4tbs- Corn oil
- 1ltr- milk
- 4- gloves of garlic
- salt, to taste

Directions
1. Cook the vegetables.
Cook the shallots, leeks and garlic in the oil for a few minutes, without color.

2. Add the celery.
Add the celery and cook for another few minutes until starting to soften.

3. Add the flour and spinach.
Add the flour and mix well, then add the spinach and mix it around.

4. Add milk and stock.
Slowly add the milk and vegetable stock, ensuring there are no lumps.

5. Simmer the soup.
Stir continuously, bring to a simmer, then switch off and remove from the heat. Cover and leave for a few minutes.

6. Blend and season.
Blend until smooth in a food processor. Correct seasoning.

7. Serve hot.
Serve hot in a clean soup bowl.
