Ingredients
- 4- salmon fillets (180g)
- 1.5Ltrs- vegetable stock
- 120g- onion
- 80g- carrot
- 40g- celery
- 1- bay leaf
- black peppercorns
- salt to taste

Directions
1. Prepare the salmon.
Trim the salmon and remove any pin bones. Rinse lightly if needed and pat.
2. Prepare the poaching liquid.
In a shallow saucepan, add the vegetable stock. Add in the sliced onions, celery, carrots, peppercorns, bay leaf, lemon, and salt.
3. Simmer.
Bring the mixture into a simmer.
4. Add the salmon.
Lower the salmon into the saucepan, ensuring it is covered.
5. Poach and drain.
Maintain a low simmer and poach until the salmon is cooked. When it's done, remove and drain carefully using a fish slice.
6. Serve.
Serve hot with hollandaise sauce.
