Directions
1. Prepare the shellfish.
Clean all the shellfish thoroughly.
2. Cook the shellfish.
In a pot, combine the white wine, parsley stalk, shallots, and salt. Simmer, then add the mussels, cockles, and clams. Cook for 5 minutes until they open. Cool.
3. Cook other seafood.
Boil the lobster, crab, langoustines, prawns, and winkles until they are just cooked. Allow to cool.
4. Prepare oysters.
Shuck the oysters and keep them chilled.
5. Make the sauce.
In a bowl, mix the tomato ketchup, mayonnaise, brandy, tabasco, garlic, vinegar, and red wine vinegar. Stir until smooth.
6. Assemble the platter.
Arrange the seafood neatly on a large platter.
7. Serve.
Serve chilled with the sauce on the side.
