- 50g- shallots
- 25g- flour
- 1tbsp- parsley
- 60ml- white wine
- 2kg- mussels
- 200ml- fish stock
- salt and pepper

Directions
1. Prepare the mussels.
Clean and debeard the mussels. Discard any that are open and do not close when tapped.
2. Cook the mussels.
In a large pot, add the white wine and bring to a simmer. Add the mussels, cover, and cook for 5 minutes, until they open. Remove the mussels and set aside. Strain and reserve the cooking liquid.
3. Start the sauce.
In another pan, melt butter and saute the chopped shallots until soft.
