- 2tbsp- vegetable oil
- 2- shallots
- 1- lime
- 1tbsp- ginger
- 2tbsp- yuzu juice
- 1- red chilli
- 2tbsp- coriander leaves
- sea salt to taste

Directions
1. Prepare the marinade.
In a bowl mix the lime juice, yuzu juice, ginger, shallots, red chilli, sea salt, and half of the coriander leaves.
2. Marinate the fish.
Place the sea bass fillets in the marinade. Cover and leave for 20 minutes in the fridge.
3. Prepare for cooking.
Remove the fish from the marinade and lightly pat dry.
4. Cook the sea bass.
Heat the vegetable oil in a pan over medium heat. Cook the fillets for 4 minutes each side until golden and cooked through.
5. Fish the dish.
Spoon a little of the fresh marinade over the cooked fish and sprinkle the remaining coriander leaves on top.
6. Serve.
Serve with a crunchy salad of carrot, fennel, and celeriac.
