Ingredients
- 12cm- cucumber
- 125g- peas (cooked)
- 250g- brown rice
- 2tbsp- vinaigrette
- 250g- tomatoes
- 60g- haricots verts
- 60g- walnuts
- 60g- mixed peppers
- 7- spring onions
- 2- red dessert apples
- 440g- boiling water
- salt to taste

Directions
1. Boil the rice.
Add the rice in a saucepan of boiling water, sprinkle salt and cover.
2. Simmer.
Re-boil the water and stir the rice then simmer for 30 minutes.
3. Fluff the rice.
Serve the rice in a clean bowl and fluff it using a fork and pour three quarters of the vinaigrette over the rice while still hot. Cool.
4. Mix all the ingredients.
Mix in the diced tomatoes and all other ingredients, then add the remaining vinaigrette. Check the seasoning.
