Ingredients

  • 12cm- cucumber
  • 125g- peas (cooked)
  • 250g- brown rice
  • 2tbsp- vinaigrette
  • 250g- tomatoes
  • 60g- haricots verts
  • 60g- walnuts
  • 60g- mixed peppers
  • 7- spring onions
  • 2- red dessert apples
  • 440g- boiling water
  • salt to taste

Directions

1. Boil the rice.

Add the rice in a saucepan of boiling water, sprinkle salt and cover.

Re-boil the water and stir the rice then simmer for 30 minutes.

Serve the rice in a clean bowl and fluff it using a fork and pour three quarters of the vinaigrette over the rice while still hot. Cool.
