How to make the asparagus soup
Ingredients
- 400g- Asparagus stalk trimmings
- 250ml- milk
- 100g- Onion
- 100g- Butter
- 2- Bouquet garni
- 2ltrs- chicken stock
- 100g- Flour
- 100g- Celery
- pinch of salt, pepper

Directions
1. Sweat the vegetables.
Gently sweat the onions and celery, without coloring, in the butter.

2. Mix in the flour.
Remove from the heat, mix in the flour, return to a low heat and cook out, without coloring, for a few minutes.

3. Add chicken stock.
Gradually add the hot chicken stock. Stir to the boil.

4. Add the asparagus trimmings.

7. Season.
