How to make pea velouté soup

Ingredients

  • 0.8kg- Frozen peas
  • 80g- margarine
  • 80ml- Double cream
  • 400ml- Milk
  • 2- Shallots
  • 20ml- Vegetable oil

Directions

1. Blanch the peas for 3 minutes, then drain.
2. Heat the oil and cook the shallots without letting them color.
3. Add the peas into the pan and cook for a further 3 minutes.
4. Add the milk, bring to a simmer and cook until the peas are tender.
5. Cool the mixture slightly, then transfer it to a food processor and liquidize until very smooth.
6. Add the cream and margarine just before serving.
7. Serve hot.
