Ingredients
- 500ml- lamb jus
- 30ml- vegetable oil
- 50g- shallots
- 25g- butter
- 1tbsp- chervil
- 200g- chicken wings
- 100g- tomatoes
- 1tbsp- tarragon
- 75ml- red wine vinegar
- 300ml- chicken stock
- 40ml- white wine vinegar
Directions
1. Roast the chicken wings.
Put the jus and stock in a pan and reduce to 1 litre, then roast the chicken wings until golden.
2. Cook the vegetables.
Sauté the shallots, then add the vinegar and tomatoes, scraping the pan to lift any browned bits.
3. Simmer.
Add the stock and simmer for 15minutes.
4. Sieve.
Pass the mixture through a conical strainer and remove it from the heat, then infuse with the aromatics. Sieve again through a muslin cloth.
