Ingredients
- 3tbsp- white wine vinegar
- 10g- tarragon
- 6- egg yolks
- 12- peppercorns
- 325g- butter
- 10g- chervil and terragon
- salt and cayenne pepper
Directions
1. Cook the aromatics.
Cook the tarragon, shallots, peppercorns, and the vinegar in a saucepan. Add 60ml water.
2. Sieve.
Pass the mixture through a fine conical strainer.
3. Whisk the mixture.
Combine the reduction and the egg yolks. Whisk together.
4. Whisk in the butter.
Remove the mixture from the heat, then whisk in the butter.
5. Season
Season to taste and add the herbs (tarragon and chervil).
