- 100g- mushroom (chopped)
- 50g- butter
- 200g- tomatoes
- 20g- shallots (chopped)
- 500ml- reduced stock
- 100g- parsley (diced)
- 100g- tarragon, chervil (chopped)

Directions
1. Cook the shallots.
Melt the butter in a saucepan and cook the shallots for 3 minutes.
2. Add the mushrooms.

4. Add the chopped herbs.
