Ingredients
- 540ml- Cream
- 1-Lemon
- 225g- Mushroom trimmings
- 4.5litres- chicken stock
- 400g-Flour
- 400g- Butter
- 9- egg yolk
- 900g- white button mushrooms
Directions
1. Melt the butter.
Melt the butter in a thick bottomed pan.
2. Add the flour.
Add the flour and mix in. Cook to a sandy texture without coloring and allow to cool.
3. Add the stock.
Gradually add the boiling chicken stock and stir until smooth and boiling.
4. Simmer.
Add the white button mushrooms and trimmings, then simmer for 45minutes.
5. Strain.
Pass through a fine conical strainer.
6. Simmer.
Bring to a simmer and add the egg yolk, cream, and lemon juice.
