- 1ltr- brown stock
- 50g- celery (chopped)
- 100g- carrots (chopped)
- 100g- onions (chopped)
- 400g- veal bones

Directions
1. Brown the bones.
Chop and brown the bones in the oven and drain off all the fat.
2. Boil.
Add the bones to a saucepan with stock and bring to a boil. Skim and allow to simmer.
3. Add the vegetables.
Add the lightly browned onions, celery, and carrots to the veal bones.
4. Simmer
Simmer for 40 minutes. Then remove the joint meat from the roasting tin when cooked.
5. Degrease the tin
Carefully strain off the fat in the tin.
6. Simmer.
Return the joint to the stove and brown it, then deglaze with the brown stock.
7. Season.
Simmer for 5 minutes, correct the seasoning and strain off all the fat.
