Ingredients
- 12g- tomato puree
- 75g- cream
- 25g- vegetable oil.
- 2- juniper berries
- 1g- thyme
- 25g- butter
- 200g- plum tomatoes
- 750g- chicken stock
- 30g- celery
- 1- clove of garlic
- 5g- gastric (sherry vinegar and sugar) heated
- 90g- carrots
- 1/2- bay leaf
Directions
1. Sweat the vegetables.
Sweat the carrots, garlic, and celery in butter.
2. Add the tomato puree.
Add the tomato puree, thyme, plum tomato, and bay leaf, then cook for 10 minutes.
3. Add the stock.
Mix in the stock and juniper berries. Bring to a simmer.
4. Strain.
Strain the mixture using a conical strainer.
5. Season.
Add cream, then boil. Season to taste.
