How to prepare Hollandaise sauce

Ingredients
- 325g- butter
- 12- peppercorns
- 5- egg yolks
- 3tbsp- white wine vinegar
Directions
1. Cook the peppercorns.
Place the peppercorns and vinegar in a cooking pot and cook for 10 minutes. Then strain off the peppercorns.
2. Cool the reduction.
Add 1 tablespoon of cold water to the strained reduction, then let it cool.
3. Add the egg yolks.
Add the egg yolks to the cooled reduction and whisk continuously. Then, place the saucepan over gentle heat until the yolks have thickened.
4. Add butter.
Whisk in the butter and combine until the sauce is thick and smooth.
5. Season.
