- 250ml- milk
- 400g- white mushroom
- 100g- vegetables (leeks, onions, parsley)
- 2ltrs- chicken stock
- 100g- butter
- 100g- flour
- 2- bouquet garni
- pinch of salt, pepper

Directions
1. Sauté the vegetables.
Gently sauté the sliced onions, leek, and celery in the butter without coloring.

2. Mix in the flour.
Mix in the flour and cook over a gentle heat to a sandy texture without coloring.

3. Cool.
Remove from the heat and cool slightly.

4. Mix in the stock.
Gradually mix in the hot stock and stir to boil.
