How to cook mushroom soup

Ingredients

  • 250ml- milk
  • 400g- white mushroom
  • 100g- vegetables (leeks, onions, parsley)
  • 2ltrs- chicken stock
  • 100g- butter
  • 100g- flour
  • 2- bouquet garni
  • pinch of salt, pepper

Directions

1. Gently sauté the sliced onions, leek and celery in the butter without coloring.
2. Mix in the flour and cook over a gentle heat to a sandy texture without coloring
3. Remove from the heat and cool slightly
4. Gradually mix in the hot stock and stir to boil.
5. Add the washed, chopped mushrooms, the bouquet garni and season, then simmer for 40 minutes.
6. Remove the bouquet garni. Pass through a sieve.
7. Pass through a medium strainer and return to a clean saucepan.
8. Re-boil, correct the seasoning and add the milk.
