Ingredients
- 2kg- Tomatoes
- 100g- butter
- 2slices- bread
- 50g- bacon
- 2- Bouquet garni
- 200g- onion
- 2ltrs- white stock
- 100g- flour
- 200g- carrots
- salt to taste
- pinch of pepper
- 1/8ltr- cream

Directions
1. Cook the bacon, onion and carrots.
Melt the butter in a sturdy pan, add the bacon, onion and carrot (mirepoix) and brown lightly.

2. Mix in the flour.
Mix in the flour and cook to a sandy texture, add the white stock and stir to boil.

3. Pour in the tomato puree.
Pour in the tomato puree after the soup has come to a boil.

4. Season.
Add the bouquet garni and season lightly.

5. Bring to a simmer.
Simmer for approximately 1 hour and remove the bouquet garni and mirepoix.

6. Blend.
Blend and return to a clean pan.

7. Add the cream.
Add the cream, correct the seasoning and bring to the boil.

8. Serve hot.
Serve hot in a clean soup bowl with toasted croutons separately.
