How to make cream of tomato soup
Ingredients
2kg- Tomatoes
100g- butter
2slices- bread
50g- bacon
2- Bouquet garni
200g- onion
2ltrs- white stock
100g- flour
200g- carrots
salt to taste
pinch of pepper
Directions
1. Melt the butter in a sturdy pan, add the bacon, onion and carrot (mirepoix) and brown lightly.
2. Mix in the flour and cook to a sandy texture, add the white stock and stir to boil.
3. wash the tomatoes and squeeze them into the soup after it has come to a boil.
4. Add the bouquet garni and season lightly.
5. Simmer for approximately 1 hour and remove the bouquet garni and mirepoix.
6. Blend and return to a clean pan, correct the seasoning and bring to the boil.
7. 13. Serve hot with toasted croutons separately
