Chicken Soup Recipe
Chicken soup recipe is made with onion, leek, celery, flour, oil, chicken stock, bouquet garni, salt, pepper, and milk. Here is an easy recipe to make chicken soup.
Ingredients
2ltrs-Chicken stock
100g- Flour
250ml-Milk
2- Bouquet garni
200g- vegetables (leeks, onion, celery)
100g- butter
50g- Cooked dice of chicken
pinch of salt, pepper
Directions
1. Slice the onions, leek and celery, and cook gently in a thick-bottomed pan, in butter.
2. Mix in the flour; cook over a gentle heat to a sandy texture without coloring.
3. Cool slightly; gradually mix in the hot chicken stock and stir to the boil.
4. Add the bouquet garni and season then Simmer for 45 minutes.
5. Remove the bouquet garni and pass firmly through a fine strainer.
6. Return to a clean pan, re-boil and finish with milk; correct the seasoning.
7. Garnish with the cooked dice of chicken and serve hot.
