Chicken Soup Recipe with Step by Step Pictures

Place all chicken soup ingredients on the preparation table. Weigh the butter, milk, chicken stock and flour. Wash, peel and dice the vegetables as required. Collect the soup ladle, soup pots and all needed cooking equipment.
How to prepare chicken soup
Ingredients
- 2ltrs-Chicken stock
- 100g- Flour
- 250ml-Milk
- 2- Bouquet garni
- 200g- vegetables (leeks, onion, celery)
- 100g- butter
- 50g- Cooked dice of chicken
- pinch of salt, pepper

Directions
1. Sauté the vegetables.
Slice the onions, leek and celery, and cook gently in a thick-bottomed pan, in butter.

2. Mix in the flour.
Mix in the flour; cook over a gentle heat to a sandy texture without coloring.

3. Mix in the stock.
Cool slightly; gradually mix in the hot chicken stock and stir to the boil.

4. Season.
Add the bouquet garni and season then Simmer for 45 minutes.

5. Sieve through a conical strainer.
Remove the bouquet garni and pass firmly through a fine strainer.

6. Add milk.
Return to a clean pan, re-boil and finish with milk; correct the seasoning.

7. Serve hot.
Garnish with the cooked dice of chicken and serve hot in a soup bowl.
