Ingredients
- 600g- Fresh peas
- 200g- butter
- 1kg- potatoes
- 2- lemon
- 8- cod fillets
- 100ml- olive oil
- 2- onions
- 800ml- fish stock
- 1tbsp- chives
- 1tbsp- thyme
- sea salt
- black pepper

Directions
1. Preheat the oven.
Preheat the oven to 180 degree celcius.
2. Prepare the potatoes and onions.
Sauté the onions in butter until soft. Season with salt, black pepper, and thyme.
3. Layer the potatoes.
Grease the baking dish lightly, then layer half of the sliced potatoes at the bottom. Top with half of the sauteed onions. Repeat with the remaining potatoes and onions.
4. Add the cod.
Place the cod fillets on top of the potato and onion layers. Pour the fish stock over the dish and drizzle the remaining olive oil. Add lemon slices on top for freshness.
5. Bake.
Cover the dish with foil and bake for 30 minutes, until the cod is cooked through and potatoes are tender.
6. Add peas.
In the last 5 minutes of baking, scatter the fresh peas over the dish and place it back in the oven for a further 3 minutes.
7. Garnish and serve.
Remove from the oven and sprinkle with fresh chives, then serve.
