- 250ml- reduced brown sauce
- 25g- butter
- 25g- shallots
- 2g- cayenne pepper
- 150ml- dry white wine
Directions
1. Sweat the shallots.
Melt the butter in a saucepan and sweat the shallots.
2. Add the wine and stock.
Add the white wine and the stock, boil and bring to a simmer.
3. Season.
Season using cayenne pepper and check the consistency.
