- 100g- mushroom trimmings
- 2- egg yolks
- 500ml- veal velouté
- 1tbsp- lemon juice
- 1tbsp- tomato puree

Directions
1. Boil the velouté.
Pour the velouté in a saucepan and bring to a boil.
2. Stir in the mushroom trimmings.
Stir in the mushroom trimmings and allow to simmer gently.
3. Strain the mixture.
Add the tomato puree, mix thoroughly and strain using a fine conical strainer.
4. Whisk the egg yolks and cream.
