- 150g- Brown basmati rice
- 2- spring of fresh thyme
- 300g- celery
- 4- eggs
- 3tbsp- olive oil
- 2 - lemon
- 1- onion
- 2- tomatoes
- 1/2- cucumber
- 3tbsp- parsley
- 1tbsp- coriander
- 1- pomegranate

Directions
1. Simmer the rice.
Simmer the rice with the thyme and celery until tender. Drain and cool.
2. Boil the eggs.
Boil the eggs and refresh them in cold water. Peel off the shells and slice the eggs into quarters.
3. Mix in the ingredients.
Add the rice in a bowl and add olive oil, lemon zest and juice, red onion, tomato and cucumber and stir the ingredients to mix through with the rice.
4. Season.
Add chopped parsley, mint, coriander and pomegranate. Season to taste.
5. Serve.
Serve and place the quartered eggs on top.
