  • 800g- new potatoes
  • 130ml- olive oil
  • 2- shallots
  • 2- cloves of garlic
  • 1- red chilli
  • 2- carrots
  • 150g- sugar snap peas
  • 150g- purple sprouting broccoli stems
  • 1tbsp- fresh dill
  • 1 tbsp- flat leaf parsley stem
  • sea salt
  • black pepper
  • 200ml- white wine

Directions

1. Prepare the potatoes.

Wash and boil the potatoes in water seasoned with rock salt for 15 minutes until tender. Drizzle with the olive oil and set aside.
