- 200g- Flour
- 2- egg yolk
- 4 drops of lemon juice
- 2 litres - chicken Stock
- 120ml- Cream

Directions
1. Melt the butter.
Melt the butter in a thick bottomed pan.
2. Add the flour.
Add the flour and mix it in. Cook to a sandy texture without coloring.
3. Add the boiling chicken stock
Cool the roux, then add the boiling chicken stock and boil.
4. Simmer.
Add the mushroom trimmings and bring to a simmer.
5. Strain.
Pass through a conical strainer.
