- 100g- feta cheese
- 4tbsp- pistachio nuts
- 8tbsp- vegetable oil
- 800g- brown lentils (cooked)
- 40 leaves- sorrel
- salt, pepper

Directions
1. Cook the fillings.
Heat the oil in a pan. Add the lentils and the sorrel, season with salt and pepper. Stir until the sorrel is wilted.
2. Add the remaining fillings.
Remove from the heat, then add the feta cheese, mint, and pistachio nuts.
3. Beat the eggs.
Beat the eggs well, and add a teaspoon of cream to every three eggs.
4. Cook the omelette.
Heat sufficient oil in the pan and make the omelettes.
5. Add the filling in the omelette.
