Follow these simple steps to the end.
Ingredients
- 1kg- Raw, meaty bones
- 100g- Onion
- 100g- carrot
- 100g- celery
- 100g- leek
- 1/2 Bouquet garni
- 8- peppercorns
Directions
1. Chop the bones.
Chop the bones into small pieces, and remove any fat or marrow.

2. Boil.
Place the bones in a large stock pot, cover with cold water and bring to boil.

3. Wash off the bones under cold water.
Wash off the bones under cold water, then clean the pot.

4. Re-boil the bones.
Return the bones to the cleaned pot, add the water and re boil.

5. Skim.
Skim when required, wipe round inside the pot, and simmer gently.

6. Add the vegetables and peppercorns.
After 2hours, add the washed, peeled whole vegetables, bouquet garni and peppercorns.

7. Simmer.
Simmer for 6 hours. Skim and strain.
